My daughter has celiac disease. Its real bad and she can't have any cross contamination or she gets so ill we end up in the hospital.
What are our choices etc. for food while we are there?

First make sure special dietary needs are noted on your reservation. Be sure to alert the concierge staff prior to your arrival regarding this as well so they can be prepared to discuss the concierge offerings with you and your daughter.
If you have made any dining reservations, make sure to denote the special diet on there as well. It is likely that the chef in each location will help guide you through the dining choices for that location.

I recently chaperoned a friend's child with allergies at Animal Kingdom on a field trip. My children do not have allergies so it is not something I have a lot of knowledge about. Her daughter has numerous allergies including dairy and gluten.
We had lunch at Tusker House. I had noted the allergies on my reservation and mentioned it again at check in. The chef came out and walk us through the buffet line noting what she could have and what she could not have. None of the desserts would work for her so at the end of the the meal , he brought out special dairy free, gluten free cookies.
To me , Disney seems very prepared to deal with allergies and extremely accommodating. The chef made me feel very comfortable and secure which is great when you are responsible for someone else's child!
