I blieve EPCOT and MK revert back to their "normal" shows on January 1.
MK will usually have two nights "New Year's Eve" fireworks - on December 30 and on December 31 as well - just so that twice as many people will have a chance to see them.

True of Epcot, but we just don't know what will be happening at MK this year.
They've extended some of the holiday events till Jan. 7, 2012, so it MIGHT be that MK will be running Christmas Wishes along with the Castle Dream Lights thru the first week of Jan.
Mk will typically run holiday wishes a few days into the new year but the fireworks for New Year's Eve are only done for two nights, on New Years Eve and the night before.
