I'm sorry! That is frustrating!
I know some people try for the more in demand rides at the end of their trip ... since less people will have been able to book those days.
However, with FP, I've noticed that availability changes a lot, so I would check back, even this afternoon, you may find some again.

It is because people that have 7 day or 10 day reservations were able to book FP's for those days 7 or 10 days ago and they are all gone already. Same thing has happened to us on the last couple of trips and it really really ticks me off. We have one more special event we are scheduled to attend next year at WDW and that is probably going to be the end of our visits. There is so much about the FP+ system and dining reservations that irritate us so much, we are to the point we are just going to quit going regularly. I can't deal with it anymore.

ALWAYS go for your most wanted FP+ option(s) on the LAST day of your trip, first. That will always be your best opportunity to get them. You can work backward from there, but as 1DisneyNut said, your Day One WILL be someone else's last day, or at least late in their trip, and could have been selected up to 10 days before you even got a chance to look.

Shared frustration on this topic.
Could be an uptick in Guests, but I don't really recall this being an issue say 2 -3 year ago and seems to have only gotten worse recently.
Starting to wonder if the original concept of "holding back" a certain number of Reservations for those whose vacations open on Day "X: has either stopped or been greatly reduced.
The tips above are the best way to handle this issue, book the most popular for the last day of your trip first, and work your way backwards.

But, but, but....it's a great system.

We also book later in our trip for our most wanted attractions. I also do not book in chronological order - I book the must haves first later in the trip. Disney has some wonderfully overpriced special events that allow you to ride with minimal lines. Try the Early Morning Magic in Toy Story Land or the Disney After Hours. If you can't get Fastpasses and really want to ride, you can wait 60 minutes or pay more. We rode Slinky Dog at opening in November. The line was already 60 minutes and we booked it from the entrance along with everyone else. Slinky Dog is definitely worth it! Keep trying because supply can change. I share your frustration.
