Last minute trip being planned, 9/28 to 10/2. How crazy with the F&W at Epcot be on the day it opens, 9/30? I'm assuming 10/1 will be even crazier?

We've been on opening day before and thru the earlier part of the day it is not bad at all (at least it hasn't been). On weekends though many locals come to enjoy, so it is a bit crazier.
I hope it is not very crowded either, but note...I am going for the WDW Wine and Dine Half Marathon. The race is run Saturday night from 10PM - 3AM. It starts at Sports Complex, wraps through AK and HS - ending at EPCOT. They are leaving the park open for runners and folks that purchased an extra ticket to join runners.
So, I would expect a bit of folks just there for the W&D event
See you there Wish me luck on the run. If you have never runDisney, you just don't know what you are missing.

True, with the Wine & Dine Half crowd there, it will be a busy weekend. We had so much fun last year at the after-party. My DH had signed up this year as well, but got temp orders in Virginia so we're having to miss it. I'm so sad!
Pretty much any weekend during F&WF, especially after 2pm, the World Showcase is packed. We like to get there right when it opens and enjoy until the crowds get heavier.
