I'm not sure if they still do it, but Port Orleans used to have a carriage ride at night through the resort.

You could also rent a SeaRaycer together and ride down to DTD and around the waterways.

I've booked the Radisson on Altamonte Springs Blvd. It's very close to Downtown Disney and is a new (1 yr old) hotel. It got good reviews and looks nice, so here's hoping.
