Well there is only a couple of things that i would reconmend is wait to go to WS for a couple of hours when it opens and then go. The other thing i would reconmend is sence you have two young children is a mid day brake at your resort so you can see the best night show i have ever seen in my life that night. If you want to see more of what ea. park has to offer prepare yourself for long days i reconmend taking long walks in a new pair of shoes before you go to WDW. Don't go to the park that is offering Extra Magical Hour all day long go but only when it first opens for a couple hours and then go to another park that day. Oh yea have your on vacation. last but least plan what you want to do and be flexible.

Epcot is a great park and one I'm still exploring! Spaceship Earth should not be missed, it's a relaxing ride also and helps you cool off when you've been doing to much.
I enjoyed the English band that plays at certain times in the United Kingdom, there was also a street performer there when the band took a break.
The 2 rides that are mentioned are very tame short rides, I enjoyed Maelstrom the best of the 2.
One thing your children would enjoy on a hot day, is a fountain area where the water shoots up from the ground and children can play in it, plenty of benches around for parents to sit and watch (and wish they were playing in it also)
The Living Sea is a wonderful place with so much to offer, I would think both children would be entertained for a long time there.
Have a great time!
