We are annual passholders who are going to Disney in December. In MDE I can see FP for one month. Staying at SSR, we should be able to book at 60 days out. Will those dates show up 60 days out? The reservation is linked to our account. Thanks!

Should work, provided your hotel reservation and tickets are linked to your account. Since you don't have a reservation in the next 60 days you're only eligible for 30.

If your reservation and passes are linked to your account, then yes. You'll see a rolling 30 days from "today" until you reach the 60 day mark. Just after midnight on that day, you will magically see everything from there until your trip.
