They do carry Van's Gluten Free waffles but other than Crystal Palace and The Castle. Because WDW does a great jobs with special dining needs I'd take a guess that they're available in more places than that.

In January 2011 we had gluten free waffles at Fort Wilderness' Trails End restaurant. The waffles were made to order on a waffle iron and they were very tasty. I sure hope Disney did not change to gf boxed waffles.

I googled "gluten free Mickey Waffles at Walt Disney World" and a site came up and mentioned that the Kona Café made them. I won't put the website, but if you google it, there are quite a few different responses.
