This question may have been asked before but I am far enough along in my trip planning to think about which restaurants we want to do. Question: if you could eat in only 2 places in each park OR resort, which would you choose? Need some input please. THANKS, Jeff

You didn't specify betweenCS/TS so I'm going with one of each to make up my two. :-)

MK
Cosmic Ray's (because of a childhood fondness for Sonny Eclipse, otherwise I'd say Columbia Harbor House)
Be Our Guest (but only because we haven't tried it...otherwise we don't usually do TS in MK)

Epcot
Restaraunt Marrakesh
Katsura Grill (or Sunshine Seasons)

DHS
SciFi (mostly because we enjoy the theming)

We don't usually do a counter service here because we rarely stay all day...so we have a late TS lunch and end up doing a late CS dinner at Epcot).

AK
Yak and Yeti
Flame Tree

Resorts
Boma!

By only two in each park or resort, I assume you mean two per park and to choose if it would be in park or at a resort instead? So you're asking for 8 recommendations total? In which case, these would be mine.

MK Area:

California Grill (Contemporary)
Narcoossees (GF)

Epcot Area:
Monsieur Paul
San Angel Inn/Hacienda de San Angel (depending on mood)

DHS Area:
Kouzzina (Boardwalk)
Flying Fish (Boardwalk)

AK Area:
Sanaa (AKL/Kidani)
Boma (AKL)

Interestingly enough, the only park I would actually eat in is Epcot given the criteria. But there are so many I leave off in this case, like 'Ohana or Be Our Guest, which would be good ones to add. And I could easily ignore two parks/areas in favor of keeping all my table service meals in Epcot and resorts. So it's all relative.

I will offer up my 2 favorite that we do every trip, O'hana and Biergarten. The rest we mix up and try new things. I know this isn't 2 for each park but I am still a newbie and formulating opinions on other must do's. Happy planning!

We're very pedestrian rather than gourmet diners and go for the ambiance as much as food. Here are our plain choices:

MK
counter service: lunch Cosmic Rays - if we can order before 11:30 am
table service: none - head to an MK area resort, #1- 1900 Park Fare at Grand Floridian; #2 Ohanas at the Polynesian; both for supper

Disney Hollywood Studios
counter service: none - generally hop to Animal Kingdom for lunch
table service: Hollywood & Vine for breakfast or 50s Prime Time for lunch

Animal Kingdom
counter service: lunch at Flametree Barbeque
table service: breakfast at Tusker House

Epcot
counter service: Sunshine Seasons at the Land Pavilion, lunch or supper.
table service: breakfast with the princesses at Akershus, in Norway; supper in either Marrakesh or Tokyo Dining

Resorts
MK area
counter service: Roaring Fork at Wildnerness Lodge
yet another table service must do for us is Trail's End Kitchen at Fort Wilderness campground - kids think of this buffet as comfort food. any meal, altho we do more suppers here.

Epcot area
counter service: hmm. Pizza Window on the Boardwalk :D
table service: lunch at Big River Grill and Brewing Works; or breakfast at Cape May at Beach Club

Port Orleans
counter service: Riverside has a nice seating area but French Quarter has those beigneits
table service: we've only eaten at Boatwright's at Riverside once but we really enjoyed that meal.

Downtown Disney
counter service: Earl of Sandwich
table service: have only eaten at one DD restaurant (Raglan Road) and while the food was fine we have not felt compelled to return.

We haven't tried every place in the theme parks, but here is what we typically do. Maybe we've grown sedentary in our ways, maybe it's because we've found something we like and we're stickin' with it!

MK:
Columbia Harbor House
Casey's (mmm...chili cheese dog)

You don't need ADRs for either and we have grown to like them more that MK table service.
(We haven't tried Be Our Guest Yet)

AK:
Yak and Yeti (Table service)
If you don't get an ADR, and you're a small party you can sit at the bar and order the full menu.
We haven't tried anything else at AK (again, we stick with what we like), but if we did two meals at AK we'd go to Flame Tree.

EPCOT:
GREAT time at the Biergarten!
We did Chefs de France, but...eh.
We had some bad ADR experiences, so we typically snack at EPCOT. Cheese plate here. Chips and salsa there!

HS:
PRIME TIME
PRIME TIME
I mean...I guess if I had to pick another one...Staring Rolls.

Gaston's Tavern for Snack
Casey's for Quick Service (love a good hot dog)
BOG - Table Service

DHS:
The little stand by Indiana Jones for a snack/beer. OHHH, what's the name...
Backlot for Quick Service
Hollywood Brown Derby - Table Service

Epcot:
France for Snack
UK for Quick Service Fish n chips, to be specific
Any COUNTRY for dinner (Cant pic a fav. My goal is to try them all and the repeat)

AK:
The truck style kiosk near the Safari ride for a snack...another name I forget
Pizza Safari for Quick Service
No fav Table Service here. I never have dinner in this park.

At the Resorts:

I love the Maya Grill at CSR!!!

My favorites that I always choose on each trip are:
MK
Counter service: Columbia Harbor House
Table Service: Liberty Tree Tavern (lunch)

EPCOT (this was REALLY hard to narrow down, lol)
Counter Service: Tangerine Cafe (Morocco)
Table Service: Les Chefs de France (lunch or dinner)

Hollywood Studios
Counter Service: Starring Rolls (lunch only as the close at 4 p.m.)
Table Service: Sci Fi Dine In (lunch or dinner)

Animal Kingdom
Counter Service and Table Service: Yak and Yeti.

Resorts
Counter Service: The Mara at Animal Kingdom Lodge
Table Service: Kona Cafe at the Polynesian (breakfast)

Downtown Disney (I know you didn't ask for it, but just for funsies...)
Counter Service: Earl of Sandwich
Table Service: Raglan Road

We do not normally do TS dinning since we do not like to slow down much but here are our favs.

MK- Pecos Bills
Whispering Canyon Cafe at Wilderness Lodge.( but not back since menu change)

Epcot- sunshine seasons

Big river brew works at Boardwalk

HS- We dont eat here except to snack

Ak Pizzafari.
