Resort counter service

I need ideas for counter service on the monorail loop. I've only done the character meals at each of them, so I know nothing about the counter service options.
Also, if we wanted to visit the Wilderness Lodge at night, should we eat there or return to our resort for dinner?

I think you should go ahead and try a meal at the Wilderness Lodge while you are there.

For quick service, I love Captain Cook's at the Poly. The adult grilled cheese with a big Dole Whip, one of my favorite quick service meals at Disney. Plus they have some more unique quick service meals in keeping with the Poly theme.

I also enjoy Gasparilla Grill at the GF. You can take your meal out to the tables around the marina and enjoy a fantastic view of the castle while you eat.
