Pop Century Gluten Free Options?

Hello!
My girlfriend and I will be traveling to Disney next week and staying at Pop Century. Since our last trip she has been diagnosed with Celiacs and needs to eat Gluten-Free. Does anyone know what (if anything) they are able to prepare there for her that would be gluten-free?
I have read that the Table service restaurants are very accommodating for people with dietary restrictions, but I wasn't sure how quick service locations would be (especially trying to avoid cross-contamination).

I can't tell you exactly what they have, but I do know they have some gluten-free options, even at the CS places. Usually you have to ask and they'll work something out for you.

The resorts are usually quite good with food allergies and special needs, often better than the QS locations within the parks.

She can talk to the chef, and they will make sure she has something safe (and yummy) to eat.
