Ideas needed

We're going march 31-April 7th. My husband and I are looking for ideas on giving my daughter a surprise once we're there. She knows about the trip and was in on all the planning, we just want to do something special for her. She's 20 but a very young 20, more like 13-17 yrs @ times, special needs kid. Last time we went we did something through the Disney florist and it was in the room waiting for her when we arrived, looking for a different idea now.

Fireworks cruise? Carriage ride through Fort Wilderness? A special dinner like Victoria and Albert's? A tour such at Keys to the Kingdom? Or the new Animal Kingdom tour? A spa treatment?
