I know there's no way to know if free dining will be offered in June, but if it is, how soon will we know? I've been thinking about our next trip in June. We're booked right now for 8 nights/5 days in the FWCampground. However, if dining were free, we could stay in a value for less than what we're paying now. Is it likely to be offered before the 180-day mark? If I change reservations, will I be able to keep my ADRs and just switch them over?

Just like knowing not knowing IF free dining will be offered in June, there's no way of knowing WHEN such an offer might be made.

If the dates do not change, you will not need to change your ADR's. They may be linked to your current reservation number, but it's not a requirement to keep them.
