Does the food court at POR have soy milk selections? And how to request any foods there that are gluten free>

I don't think there is a way to "request" certain foods. If you require a certain type of menu, perhaps a suite with a cooking area would best serve your needs.

I didn't take a close look at the milk offerings at POR.

Disney is quite good at helping people with all types of food allergies and intolerances. I know that people with more experience than me will be along, but yes, there are gluten-free options all around Disney.
