Here's my question. We are going the week of Feb.11th-19th. I know the free Dining offer ends on the 17th. Will the offer carry over to cover the other 2 dates at no extra charge?

yes, the free dining is based on resort check-in, so as long as you check in on a day that is covered by the free dining promo, you get the free dining for the length of your stay.
