What are the normal dining hours lunch/dinner?

Question for my I-Cot friends: We are in the midst of planning our ADR's for our December trip to the 'World" and I was wondering just what are the normal lunch and dinner hours for casual dining restaurants? We're specifically looking to book a late lunch at Liberty Tree Tavern.

LTT dinner starts at 4:00.

According to the guide book I have, LLT lunch hours are 11:30 - 3:00. Then they reopen at 4:00 for dinner.

But there doesn't seem to be a rule of thumb for all Disney dining establishments. The hours vary - especially end of lunch, beginning of dinner hours.

After I posted here on Intercot, I then thought of checking the Unofficial Guide. I always come here when I need words of WDW wisdom. :D
