What weather could/should we expect for the last week in March?

Perfect would be warm enough to swim but not crazy hot walking around a theme park in the afternoon.

Sweatshirts at night is fine - but swimming in Disney's "heated" pools when the afternoon temp is 72º isn't great,

It can be a little hit or miss. However, you should see low 80s and 60s at night.

We were in Disney March 21-28 and it was nice. Warm during the day and light jackets at night.

I enjoyed the weather after being there in August previous to this.

We swam a few times.

It'll really depend on whether this El Nino holds into 2010 or not. The best thing for you to do right now would be to look at the historic weather conditions page in Info Central. That will show you the exact weather for your dates over the last 5 years. Wish I could give you specifics this far out, but if I could do that I'd be getting paid millions. Until that happens, the historic conditions will be your best bet and check back with me closer to trip time.
