The last time I stayed at Disney for 10+ days I found out that they only sold tickets for a certain number of days and then after that it is better to get an annual pass. Does anybody know how many days that is or where is the cut-off where it is more beneficial to buy an annual pass?

Figure out how many days you will be in the parks. Then figure out what it would cost you per day when you added up the cost of a 10 day ticket plus the cost of the additional ticket divided by the number of the days you will be in the parks.

Then take the cost of the annual pass and divide that by the number of days you will be in the parks.

If the cost per day for the annual pass is less than the cost per day for the other tickets, buy the annual pass.
