We were planning on ordering our tickets from OrlandoFunTickets, but I am not sure how it all works. (We are staying off-site) Do we actually receive the tickets in the mail? Your insight for a newbie would be very helpful.

I'm not familiar with those folks. Have you thought about using The Official Ticket Center (http://www.officialticketcenter.com/default.aspx?affid=TC21LBC)? They're an Intercot sponsor and using them helps support this site.
