In past years, did you have to purchase park tickets with the room to qualify for free dining or could you just book room only?

The dining plan is only available with a "vacation package", which must include at least 1 day of park tickets for each person in your room.

We still have our 1 day pass in my desk drawer.I'll have to use it one of these days,maybe turn it into an annual pass.

As Pete said, you don't actually have to use the park pass, you can keep it and use it next time. And you can just eat at the resorts. But that's if you don't want to go the parks. Not something I'd want to do!
But you could get the one day full price through them and then buy a discounted park ticket through one of the agencies that are authorized to sell discounted passes.
