I know there is an extra charge per night for more than 2 adults in the room. What is the amount for POP. I assume 18 year old would be considered an adult. I thought the charge was $10.

Per adult (aged 18 and above), over the limit of 2.

Can you add an extra adult in a Deluxe if you already have 5 people (2 adults, 3 kids)

Our kids are still young and could all 3 sleep in a queen bed, DH and I would have the other, and his mom could sleep in the daybed. Do they allow this?

If one of the children is younger that 3 and will be using a crib, then yes, your mother can be added. If your children are older than 3, than your mother cannot be added.
