I have a quick question about EMH's - are these already incorporated into the hours listed on the Intercot site?

For instance, on May 4th, MK's hours are listed as 9-11pm. But they also have EMH's in the evening. Does that mean it would be open to midnight for the EMH guests?

No. The hours posted are the hours of operations for the general public. If Extra Magic is offered in the morning the park would open an hour earlier, to resort guests. Evening "Magic" is an added 3 hours. For instance; if the Magic Kingdom is listed to remain open until 11 - the "extra" would be until 2 AM.

Disney has a snippet that says "up to 3 hours" - but it's typically always 3. That line is to cover themselves .... just in case they have to close sooner.

The hours are the general public hours, not the EMH. I agree that typically they are always 3 hours for PM and one hour prior to opening for AM. Again, they have an out if they need to close early but that has been the way it's been anytime we've gone. God Bless.

On the park hours listed on Intercot, do they include the Extra Magic Hours in the time listed? Or is it in addition to the time listed?

I know the days of EMH offered, but I am unclear of the time.

For example: May 23 says 9:00 - 11:00 at MK, but that day is EMH at MK in the evening? So is it open after 11:00?

Extra magic hours will be in ADDITION to the posted park hours. If, for example, on May 23rd the MK is open until 11pm, EMH will begin at 11pm and last approximately 3 hours. So on that day a resort guest would be able to stay until 2am.

You'll generally see crowds start to shrink 60-90 minutes into the EMH. I'd say - from my limited experience and reading I-cot - you can expect dramatically smaller crowds from about midnight or 12:30am on...assuming a 2am closing.
