I will be traveling to Disney from Dec. 12-16 and it is his first trip to WDW since he was 10! (he is now 26). I want to show him the best time I possibly can. What is the crowds like at this time of year? Are there any special events that I should hit? What about ideas for more adult interests or romantic moments? I know personally a few things I want to show him (Splash Mountain, Pleasure Island, dinner at Narcossee's) but I would sure love the input!

It is my first trip away with my boyfriend of 2 years and he has not been to disney since he was 10 (I was last there is 2005).

There are a lot of things going on during this time. This is a good time as the following week it will be packed.
things to consider:
MK-Mickey's Very Merry Christmas Party
MK-Holiday Wishes
MK-Spectromagic
Epcot-Candlelight Procession
Epcot-Tree Lighting and Winters Wonder
Studio-Fantasmic
Studio-Osbourn Lights
Studio-Holly Parade
AK-Jingle Jangle Parade

That's just the tip of the iceberg. There is so much not to even mention the rides and taking in the sites at each hotel.

There are so many holiday happenings (http://www.intercot.com/infocentral/holidays/christmas/default.asp) at this time of year, it's almost hard to fit in the regular park attractions!
