If crowds are your concern, I believe the weekend of 1/18 - 1/21 would be the busiest (my calendar says MLK birthday being celebrated the 21st). It's a mid-January long weekend for some folks to get their school-aged kids to Disney. But probably by Tuesday or Wednesday or that week - up until Valentines Day/Presidents Day/Daytona Weekend - the crowds are usually very light. It's a nice time to visit.
