This is a tough question, I think all the food booths are worth visiting. However, if you must scale it down to a manageable number, just hit the ones whose menus sound the best to you. The food will be good. Some of my favs over the years have been:

1) Quesadillas in mexico
2) Crab Cakes in America
3) Pasta selection in Italy
4) Creme Brule in France
5) Irish Stew in Ireland
6) Sam Adams Cream Ale Cake in America
7) Kefta in Morocco
8)Pierogies in Poland
9) Papas con Chorizo in Spain
10) Empanadas in Argentina

Now I''m hungry....

For sure visit Austrailia for shrimp & Beef on the barbie.
France for the creme brulee
France for the WINE
Crab Cakes in America were good
2 years ago there was a Florida / Gulf kiosk at the beginning of WS on the Canada side that had yummy shrimp salad...

IT'S ALL GOOD! :mickey:

I might be the weird one here, but I love the escargot in France and also the cheese soup in Canada. I also love the creme brulee in France. Actually, now that I think about it, there weren't a whole lot of things that I did not like. However, the escargot was a favorite.

My two cents :twocents:

For sure from experience:
Peru - Arroz con Pollo
Canada - Cheddar Cheese Soup, eh
Morocco - Bastilla
Australia - All
China - All
Mexico - All
Poland - Kielbasa and Potato Pierogies

Just guessing:
Dominical Rep - Pastelon de Platanos Amarillos
Peru - Causa with Crabmeat
Oklahoma (apparently it's own country now) - Seared Buffalo
Italy - Lasagna al Forno

These are the ones I remember and loved:

Canada
Canadian Cheddar Cheese Soup

Australia
Shrimp on the Barbie

Poland
Kielbasa and Potato Pierogies

Germany
Apple Strudel with Vanilla Sauce

There also seems to be lots of new items... wish our trip fell during the fest. We've been twice and loved it!!
Most everything we've tried was good. The one exception was some sort of meat on a sugar cane skewer they had one year... I can't remember which country, but boy was it :ack: It doesn't appear to be on the menu anymore.
Have fun!!!! :eat:

Hops and Barley Market - the onion tart. Unreal.

Champagne - duo of truffles. O.M.G. awesome. :)

and I pretty much agree with everyone else. The quesadillas, pierogies (although not my grandmother's are really good), the cheddar cheese soup... that's pretty much where I'll be.

:D

I agree with many others...
Poland - Potato Pierogies
Also Poland - the Kielbasa was ok, but not "the best" I've ever had, but I grew up in a Polish family. It was a very miniscule portion too, and paper thin slices, so I guess I was a little disappointed with that.

In Canada - the cheddar cheese soup and the maple custard (I think that's what it was).

just allow yourself time to wander around and look and smell to see what is to your liking. there is something for everyone. my favorites from last year:
USA-lobster roll and crab cake with barley salad
Australia-lamb chop with carmelized onions
Mexico-there was some kind of chicken with a green sauce that was my favorite of the whole festival
South Africa-spiced chicken on skewer
