We are in the planning stages of a grant gathering vacation to WDW. We were just informed that one person in our group is on a sodium restricted diet. The person must have little to no salt in the diet due to health issues. What is the process of picking out meals and how do we handle this. What about buffets, and I know TS would be much easier to adjust the meal for that. Anyone else had this issue and please let us know how this is done.

If you note this on your ADRs the chef/cooks at the restaurant can talk to you and help you pick out the meals. As you noted, doing a TS is a much better option than a buffet as buffets aren't really controllable.
