What restaurants in DTD can you use the DDP?

I was just wondering what restarants you can use your DDP in Downtown Disney?? Can you make reservations 180 day out? Just wondering. We are arriving on the 21st of September and will not be going to the parks till the 22nd so lunch an d dinner will have to be there or in the Caribbean Beach restaurant.
