The Twinkies in
this fun dessert are sure to put a twinkle in Santa’s eye!
1 cup sugar
2/3 cup strong brewed coffee
1/4 cup brandy or additional brewed coffee
16 oz. mascarpone cheese
2-1/2 cups heavy cream
2 tsp. vanilla extract
10 Twinkies, cut into 1/2”-thick slices
In small pot over low heat, combine 1/3 cup water and 1/2 cup sugar. Cook,
stirring occasionally, until sugar is dissolved; cool. Stir in coffee and
Place mascarpone in large bowl; reserve. In another bowl at medium speed,
beat 1-1/2 cups cream, 1/3 cup sugar and vanilla until soft peaks form. Fold
cream mixture into mascarpone.
Place layer of Twinkies on bottom of 8” spring-form plan; drizzle with half
of coffee mixture. Spread with half of mascarpone mixture. Repeat with
remaining Twinkies, coffee mixture and mascarpone. Cover with plastic wrap.
Refrigerate 8–24 hours. Remove side of pan.
At medium speed, beat remaining cream and sugar until soft peaks form.
Spread over cake and side. Decorate with M&M’s.
