Potato Bacon Soup
Boma - Animal Kingdom Lodge
Yield - 6 Servings
Ingredients:
8 oz Chicken stock
8 oz Heavy cream
8 oz milk
8 oz White wine
2 oz onions
10 oz Russet potatoes, blanched
3 oz Bacon bits, save grease
½ tsp Nutmeg
2 oz Flour
2 oz Bacon fat
Instructions:
Caramelize onions in rendered bacon fat. Add flour to make a roux.
Cook until golden brown.
Reduce wine by half and add to stock. Incorporate stock and cream to roux.
Blend the soup until it is smooth and has a creamy consistency.
Adjust seasonings along with salt and pepper. Prepare service, add bacon and
garnish with scallions.
