Blue Bayou Caramelized Pecans
Disneyland -- Blue Bayou Restaurant - New Orleans Square
Ingredients:
16 oz. Pecan Halves
6 oz. Butter Un-salted
8 oz. Brown Sugar
Small Pinch Ground cayenne pepper
Method:
Place pecans on a sheet tray and toast for 8 minutes in a 350 degree oven.
Remove from oven and let cool to room temperature. Put pecans in mixing
bowl.
In a saucepan, melt unsalted butter over low heat. Add brown sugar
and pepper. Mix well.
Bring to a medium boil. Take caramel directly from the heat and pour over
pecans. With a wooden spoon, mix caramel and pecans
and pour onto a sheet pan.
Let cool. Store at room temperature.
