Ohana Bread Pudding ala Mode with Bananas Foster Sauce

Yield: Two 8 ounce loaves
Ingredients:
Bread Pudding:
8 large eggs
3 cups whole milk
¼ cup white chocolate
½ tsp. salt
1 ½ tsp. cups sugar
1 loaf of challah bread or egg style (large enough to fill 10 cups)
½ c. crushed pineapple (canned)
1 T. unsalted butter
Bananas Foster Sauce:
1 cup dark brown sugar
½ cup corn syrup
½ cup unsalted butter
1 cup heavy cream
1 tsp. vanilla extract
1 cup spiced or dark rum
3 bananas
For Service:
½ gallon of vanilla bean ice cream
Instructions:
Bread Pudding:
1. In a large mixing bowl: wisk together eggs, salt, sugar.
2. Preheat oven to 350of. Cut challah bread in ½ inch cubes.
3. Add bread, white chocolate, pineapple to egg and milk mixture.
4. Grease large baking dish with butter. Add bread custard mix to the
greased baking dish.
5. Bake for 55 minutes. Remove from oven and let it stand for 5 minutes.
Bananas Foster Sauce:
1. In a sauce pan combine dark brown sugar, corn syrup, butter, and half of
the heavy cream. Using high heat, bring to a rolling boil.
2. Allow mixture to boil for 10 minutes and add remaining heavy cream. Let
it boil for 1 additional minute.
3. Add the run and vanilla extract. Flambé the pan using and long stemmed
lighter. Let boil until the flame goes out.
4. Reduce to a simmer and stir with a high heat spatula.
5. Peel and slice bananas. Add them to the caramel sauce. Remove the caramel
from the heat and set aside.
For Service:
Place a scoop of ice cream on top of each portion of bread pudding. Top this
with the Bananas Foster Sauce.
