Mango Sorbet
Cinderella's
Royal Table -- Magic Kingdom
Yield: 4 to 6 servings
(about 3 cups)
Ingredients:
4 large ripe mangoes, peeled, seeded and chopped
½ cup water
2 tablespoons light corn syrup
2 tablespoons sugar
1. Puree the mango in a blender or food processor—you should get about 3
cups.
2. In a bowl, stir together the mango, water, light corn syrup, and sugar
until the mixture is smooth and the sugar has dissolved.
3. Chill the mixture, covered, about 2 hours, until cold.
4. Freeze in an ice-cream freezer according to the manufacturer’s
directions. Store tightly packed and covered in the freezer compartment of
refrigerator until ready to serve.
Please Note: When working with mangoes, wash the outsides well. Some people
are sensitive to the skin. Wearing gloves, cut around the cling pit and
remove the skin.
