Chris's Cold Pie

Served at: Plaza Inn and French Market, The Disneyland Resort

Ingredients:
4 eggs, separated, at room temperature
1/2cup fresh-squeezed lemon juice
1/2 cup water
1 tablespoon unflavored gelatin
1/2cup sugar, plus another 1/2 cup
1/4 teaspoon salt
1 tablespoon grated lemon rind
1 9 inch prepared graham cracker pie crust
1/2 teaspoon fresh grated nutmeg

Instructions:

In a small bowl, beat egg yolks with lemon juice and water until combined. Mix gelatin, 1/2 cup of the sugar, and salt and the top of a double boiler. Pour in the egg yield mixture and blend well.

Cook, stirring constantly, over simmering in water for 10 minutes. Stir in lemon rind. Let sit for 20 minutes over a bowl of ice cubes, stirring occasionally. Remove from ice when mixture is thick enough to form a mound when dropped from the spoon.

Beat the egg whites in a large bowl until soft peaks form. Gradually add the remaining 1/2 cup of sugar, 2 tablespoons at a time, beating well after each edition. Continue beating until stiff peaks form. Gently fold gelatin mixture into the egg whites until just combined.

Turn into the pie crust. Dust the top with nutmeg and chill for several hours.
