First of all, you might want to consider adding more pages. Once you have already put down the initial investment, it is not that much more to add another 10'ish pages.
When picking the page layouts, we have found using a variety of styles works best. Allowing you to put in large copies of your favorite photo's. The pages with a lot of smaller photo's are great too, as they allow you to get a lot of pictures into your book.
We always like to put all of our "candid shots" on the last page of the book.
Next, you want to read, re-read and then have another set of eyes proof read all text that you add to the book. If you are the person that is writing the text, your brain will see what you expect to see. And while you can write the text in Word to avoid spelling errors, it won't point out wrong wards (words).
Double check all of the photo's. You want to look for "red eye" effect and resolve those. Also, look for duplicate use of the same pictures. Again, have someone else check for this also.
When we did ours, we tried to group relevant pictures together on some pages. For instance we had pictures from the water parks all on a 2 page spread.
Personalization is what these books are all about. You know your family and your trip. Take the time to write something relevant to the trip and what your family was doing in the photo's whenever you can.
Finally, I really can not stress this enough. Get someone else to proofread the book. This person ideally should have good spelling and grammar and it helps if they have never seen the book before proofreading it. It really is too easy to miss a simple mistake.

Luckily, I learned these lessons on doing many photobooks on other sites that were less expensive than the Disney Books.
