dining plan for a room only package?
I was thinking of buying park tickets now for our trip next year... before prices go up.
Is it possible to get the dining plan with a room only package?

No, you can not add dining to a room only reservation unless you are an annual passholder.

just trying to make this work...
what about if I'm planning a nine day trip... if I buy 8 day tickets now... can i book a package with one day tickets for everyone?
would that work? make sense money-wise?

The last few promotional offers required passes beyond a 1 day base. What they will do in the future is anyones guess. I would not count on being able to do it.

When we went last year we bought 1 day tickets with a 3 night room reservation. We were able to get free dining with it, so I would assume you could get the DP as well.

It would work (as long as the promotion didn't specifically state that you need a theme park ticket that matches the number of nights of your resort stay). But would it make financial sense? Absolutely NOT.
The price difference between a 9-day ticket and an 8-day ticket is $3. The price of a 1-day ticket is $79. So if you buy an 8-day now and buy a 1-day as part of a future package, you'd be spending $76 more than buying the 9-day ticket as part of the package.
Ticket prices may go up, BUT I guarantee you that the ticket prices will not go up more than $76 per ticket! Historically, and I'm estimating, when ticket prices go up they usually go up about 3-to-8 %. Currently, a 9-day base ticket costs $240 (+ tax). Even if the ticket prices go up 10%, that would mean you'd have to pay $24 more. You'd rather pay $24 extra than spend the $76 extra in buying two separate tickets (as explained above).
If any of this doesn't make sense, please post again!

We went down last September using tickets that we had purchased many years ago. To qualify for free dining,we only had to buy one days worth of tickets.
And we ate great.

As noted above, Disney has closed that loophole. They are requiring multiple-day ticket purchases to qualify for "free" DDP.

Maybe I'm missing something here, but wouldn't the OP also have to purchase the "no experation option" if the tickets were bought now for a trip next year? That's $178 for a 9-day ticket.

They wouldn't need the no experation option if they don't intend to use any days on the ticket till their trip next year. The ticket only expires so many days AFTER THE FIRST DAY OF USE.

One way to purchase tickets and the dining plan apart from a package is to rent DVC points from a member. DVC members, and their guests (which you are considered if you stay on points you rented from them) are allowed to purchase the dining plan without a package that includes tickets. We did that just this past Nov. We rented points for a stay at BCV and added the dining plan without having to have a package with tickets. The dining plan had to be added at time of booking, but we didn't have to pay for it till we checked in. The DVC owner forgot to add dining when making our reservations, but the staff at BCV were more than helpful and allowed us to add it anyway.

buzznwoodysmom is 100% correct. You could buy your park tickets today, put them in a drawer totally unused, and then dust them off 20 years from now and they'll still be good.
As already said, the 14-day "expiration" clock doesn't start ticking until a ticket is first used to enter a park.
