If there's room I'm sure. You MAY end up paying rack rates, but if you decide 1/2 way through, you may be able to call reservations and book it cheaper. Don't just show up at the front desk and say you want to stay longer.
If you are on a package or whatever, I don't think they will extend that, so make sure you decide before the drop dead date is on the dining plan, etc.

IF there is availability, you can extend your stay. When we were there in early December one year, another guest wanted to extend their stay at WL, and there was no availability.

I would check as soon as you get there, and hope you can keep your same room. When we have done it in the past, we had to wait to see if they would have avaibility then had to call reservations in order to see if we could get the extra nights on our discount. One time we could stay, but had to switch to another room. If you know that you are going to stay longer, change your reservation in advance in order to avoid such things

Yes, I think so...
Disney will almost always let you give them more money.

If there is room they will, in mid sept there will be room. We were there this past Labor Day for a baseball tournament, Hurricane Gustave decided to hit New Orleans and they allowed us to stay and extend our park tickets at a greatly reduced rate. I am not saying you will get a rate reduction but you should be able to stay.
