Which countries in Epcot World Showcase have rides in them? and what kind of rides do each have?

Only Mexico and Norway have rides and both of those are boat rides showcasing the country's culture and history. Neither is what you would term a thrill ride. Many of the other countries have movies or shows associated with them.

As far as rides:
Mexico has The Gran Fiesta Tour Starring The Three Caballeros
Norway has Maelstrom

Both are boat rides. Very mild and relaxing and no worries of getting wet.

Just a couple of little swooshes on Norway's boat ride, no seat belts or anything, that's how mild it is. And there is a movie after the boat ride, it's nice to see once then most people get off the boat and walk right through the theater into the gift shop.
And the ride in Mexico is even tamer but still cute and worth a ride through on it.
