Strictly NO sodium diet...
This is what my sister is on. She's never been to Disney, so when we go in Sept this is her first time, and I want her to enjoy it. So I'm just wondering, since I've already made our reservations, we are dining at; 50's Prime, Trails End, SciFi, Ohana', Boma and Coral Reef. Should I mention about her NO sodium diet now, or could she wait until we get to the restaurants. I realize with the buffet's she won't have no control over those restaurants. She's been hospitalized 2 times because of this recently, and I don't want anything to happen when we are there. Any other ideas. Thanks

All Walt Disney World resort restaurants will provide alternative meal options for special dietary needs, even at buffets. The more advance notice you can give, the easier it will be for the various restaurants to accommodate you.
From Special Dietary Needs

For very specific medical needs, call the food management department for any of the theme parks or your resort, which can be reached via the main switchboard number (1-407-824-2222). Each theme park has a specialist assigned to requesting special dietary concerns. They will be able to answer all of your questions, or put you in touch with the head chef. Chefs and Dietary Specialists will be able to tell you specific ingredients and what alternative meals they can provide to accommodate specific food allergies, PKU, veganism, or Diabetes. If you are Diabetic or have Phenylketonuria, contact the local chapter of the ADA, APA, or an educator affiliated with your physician, at least sixty days before your trip. They will give you information to help locate local pharmacies and grocery stores that will be able to handle all of your specific dietary needs. More importantly, they will provide you with a list of important questions that you should ask before making any dining arrangements. The more specific your request, and the more persistent you are, the better the service you will receive.

In addition to what Jason recommends above, call WDW-Dine and have them note EVERY ADR you have with the information about your sister's dietary restrictions. A few days before you leave, call and check that your ADRs do indeed show the information. When you check in at the podium, mention it to the CM. You should also mention it to your server. For an idea of the results this will have back in the kitchen, read the thread about nut allergies.
Hope your sis has a magical trip!

When we went with my Grandpa back in 2004, he was dealing with congestive heart failure and could not have any sodium either (he was 84). My DM contacted the appropriate restaurants and everyone was just wonderful. Especially the wait staff and the chefs. We would tell our waiter about my Grandpa's needs and often the chef would come to our table and discuss the menu with us. They were so accommodating, it was very kind. Hopefully this will ease your worries.

1) You should call the TS eatery 24-48 hrs in advance.
2) They can accommodate *most* dietary issues.
3) In your case, please specify
. . . no added sodium
. . . low natural sodium
. . . no natural sodium
4) It does make a big difference, as most foods naturally have sodium.
5) The chef needs to know more specifics than "no sodium".

Thanks everyone for your info and tips. I will definitely be calling, and also getting a little more detail from my sis.

Every single chef came out to speak to my dad regarding his 'no sodium' diet...most chef's asked my dad what he was in the mood for...and did he see anything on the menu that looked good...once my dad responded the chef would consider if he could prepare 'no sodium' or offer other suggestions...it was PERFECT and my dad ate probably better than most people as his dinners were all especially prepared for him...This is one thing that Disney does very well...
