Default Best thing outside of themeparks

What is the best thing you did outside of the theme parks? It could be a dinner, or a carriage ride, something in Disney springs. I am asking because we are taking a week to go to Disney but only plan on going to the parks 4 days tops. We are staying offsite and we plan to go mini golfing and eat at the resorts at nights. But we are looking for hidden gems to explore, something out of the ordinary maybe. Any suggestions? Thanks in advance.

Miniature golf is always nice. Rent bikes or a surrey at a resort.

Visit Celebration-- It's such a cute little town to visit.

Do an airboat ride. Nothing says FL more than riding an airboat looking for gator. And having gator later for lunch or dinner. Most airboat ride places around have a restaurant somewhere near by and they usually have gator on the menu.

Disney springs comes alive at night. Lots of entertainment and acts. And the boardwalk also comes alive at night.

Visit Disney's Fort Wilderness campground. You could rent a golf cart and spend all day riding around there. Book a hoop de doo and have an awesome dinner show.

Dining, in general, is better at the resorts than the parks, though there are some good restaurants in parks, too. Watching the animals at the Animal Kingdom Lodge is always fun for me, though not exactly a hidden gem as you were requesting.

The nighttime safari at AKL was AWESOME! It used to just be for guests staying there, but they have opened it up and we really enjoyed it. Disney Springs is quite nice now, and DD keeps asking for a "Fork and Spoon" movie, since we don't have them here at home.

We did a carriage ride at Port Orleans. We were staying at Riverside but were given the choice of touring Riverside or French Quarter. We chose French Quarter and thoroughly enjoyed it.

Gatorland zoo, further out finding some minor league baseball, and the big shopping centers are cool (large outlets).

Outlets are Amazing and so much cheaper on Disney merchandise! Gator land is a must! If you have a car I'd drive to Clearwater...most Beautiful beach and they have the Dolphins Tale aquarium!

    Course, the usual golfing.

Anyone know any good places to do some trap/skeet shooting in Orlando?
