My daughter and I will be staying at All Star Music in a couple weeks. I know you can't pool hop, but I was wondering if we have access to the beach at Poly to watch the fireworks? Or is it for guests on Poly only?

Yes, you can watch the fireworks from the beach.
Great, thank you! I've seen several places that says one of the best spots to see Fireworks when not in Magic Kingdom is from Poly beach, but I could never find anywhere that said if you have to be a guest. Thanks again!
Just keep something in mind, though. If you plan to drive there, parking could be a problem. If you're not a guest, or if you don't have a dining reservation that evening, they might not let you past security to park just for fireworks.
But the beach there is a nice place to view the fireworks. You'll miss all the projection stuff they do on the castle, but you'll get the colorful fireworks and music!
Also, be aware that there ARE days when the beach is NOT open to everyone. Fourth of July, and Christmas/New Year are usually only for guests of the Poly. Other major holidays can also be included if crowds are very high. The beach isn't that large of a space.

My understanding is that Disney is now enforcing a policy of not allowing cars into the resort lots unless the person requesting access has a dining reservation at the resort. They Poly resort is just a short walk from the Ticket and Transportation Center so one could always park at that location.
Or you can use Disney bus transportation to get there, depending where you're staying that day.
