How crowded are the parks during grad nights? Are the crowds orderly?

There are no grad nights at WDW anymore.

They just announced that grad nights will resume in 2017 but will take place at Typhoon Lagoon - not at the Magic Kingdom. They will run from 8 pm to midnight on Friday nights.

Grad nights have continued in California. Are you asking about California or Florida?
