I want to say 6:00 for the online process but I want to confirm before getting up at 3:00 am (Pacific).

You have the time right. Have your first dining reservation ready to go and at 6:00am press search. Good luck on getting your reservations.

On the plus side of the time difference, though: When it's time to make FP+, those of us on the West Coast get to do it at 9pm instead of staying up until midnight.
