multigrain bread

Does Disney still use the multigrain bread for most buns, pizza crust, etc. Since I can't eat seeds, it limits my choices. Last time I had to inquire at every restaurant about my choices. Hopefully, they have changed their dough.

I don't think there has been any large-scale change to the bread/buns in the last little while.

I would continue to ask, and I'm sure they will do whatever they can to make you something you'll enjoy, safely!
