How long will Disney hold "will call" tickets? Can I order tickets today and then pick them up in two months? Or, would that be too far in advance?

No limit.

Guests order some things over a year in advance.

By the same token, Disney maintains guest computer files for decades.
They have names and ages etc. for my family members from trips that we made
over 20 years ago. When I call about a new reservation, the CM has all of that info in front of her/him.
