It's as business needs. You'll find it open on heavier crowd days.

The same taco salad from there is offered at Pecos Bill. I wish it was open all the time as my kids prefer it.

I often wondered the same thing, since I had never seen the place open.
Our trip last September was the first time we actually saw the place in operation.
