What exactly is this? Can grown-ups play?

Haven't been to the parks in a few years, this wasn't there when we last went.

Kim Possible is an interactive game at Epcot. You go to one of the KP kiosks to sign up, and the CMs there will give you a device (your Kommunicator) similar to a cell phone which you will use to solve clues in one of the Epcot countries. Your mission will be to defeat the evil person who is trying to take over the world. Basically you go to various locations as prescribed by your Kommunicator and take some action that will cause something to happen. Usually the locations are in one of the gift shops, and your actions (pressing a button, speaking a code word to a CM, or touching an object) will set off an event, such as an animatronic figure speaking to you or something in a display window coming to life or smoke rising from a rooftop chimney. And the people around you have no idea what's going on. It's really a lot of fun, and it's not just for kids. It's free, and anyone can save the world from the bad guys.

And you'll be among the last to play it since in June it's going away and will be replaced by an all new Perry the Platypus (Agent P) game. So definitely do it and have fun.
