For example...if I have a 7 day base ticket, can I go to Magic Kingdom in the morning (using one day) and then Epcot later the same day (using another day)? Leaving 5 days on my 7 day ticket.
Also...If I am staying on property for 5 days, can I purchase a 7 day ticket? I will be there a couple extra days, but not on Disney property.

Sorry. The turnstile in the second park you tried to enter would know you didn't have a hopper and wouldn't let you in. If you want to do different parks on the same day, you need a hopper.
You can buy as many days (up to 10) as you would like. Park passes aren't tied to your resort stay.

You would need either a hopper, or a physically seperate ticket (more expensive).

As to your second question, you can purchase as many days as you want. However, they will expire 14 days from first use unless you purchase the "no expiration" option.
