View Full Version : What's for dinner?

Mostly because I'm a nosy person, but because I'm just always interested! I'm asking this as I'm having my own dinner--I'm 22 and moved back home after college, so I'm still privy to my mother's meals. Since yesterday was a Sunday and she had the time and the energy, she cooked a roast in the oven for about four hours, made green-bean casserole AND HOMEMADE mashed potatoes, which are my favorite! Especially because I hate instant.

And because she made so much of it yesterday, we get to have leftovers today! :D

So, hence my question to the age-old question...

What are you having for dinner?

LOL! I don't blame you for this. My mother used to do the SAME thing on my Girl Scout meeting night--except I had choir an hour before the Girl Scout meeting and we had Taco Bell instead.

Also, everyone, these dinners sound AMAZING. Don't be surprised if I show up at your house, with a plate! :eat:

Since I just spent 6 hours working in the garden getting it ready for winter (we had a few snow flurries last night) dinner tonight will be whatever you can find and make yourself!

I have one of my favorite crock-pot recipes simmering away - Big Red Soup:

Ingredients
2 tablespoons canola oil
2 pounds beef stew meat, cut into 1-inch cubes
3/4 cup chopped onion
2 cloves garlic, minced
2 cans (14-1/2 ounces each) diced tomatoes in sauce
1 can (10-1/2 ounces) Progresso ® Beef Broth
1 can (10-1/2 ounces) Progresso ® Chicken Broth
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1/4 cup water
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon salt
1/2 teaspoon lemon-pepper seasoning
2 teaspoons Worcestershire sauce
1/3 cup picante sauce
8 corn tortillas, cut into quarters
1 cup (4 ounces) shredded cheddar cheese
Directions
Heat oil in skillet; brown beef stew meat. Place meat in 5-qt. slow cooker; add remaining ingredients except for tortillas and cheese. Cook on low for at least 10 hours.
When serving, place enough tortilla quarters to cover bottom of each bowl. Pour soup over tortilla pieces; sprinkle with the cheese. Yield: 10-12 servings.

Roast chicken, sweet potato fries and green beans. Simple stuff here tonight.

Tinkermom, your recipe sounds really good. I just got a new crockpot that allows you to brown things right in it then turn the heat down and use it like a regular crockpot. Can't wait to break it in (figuratively, of course). Your recipe sounds like a good place to start!

Pizza rolls, it sounds good-got it from another website so don't want to post the link here but basically you cut a roll of pizza dough from a tube into 24 squares, add toppings like pepperoni, mushrooms, cheese etc. and roll them into balls and place them all into a pie pan. Brush top with butter or olive oil, sprinkle with a little garlic and parmesean and bake. Dip finished product into pizza sauce or marinara sauce-I'll let you know how they turn out ;)
