The Ireland booth at the Food & Wine Festival used to have the most awesome Potato Leek Soup. Does anyone have the recipe?

Yield: 6 servings

Ingredients:
1 pound potatoes, peeled and diced
1 medium onion, peeled and diced
˝ each leek, cleaned and diced
4 cups chicken stock
2 cups heavy cream
2 teaspoon butter
To taste salt
To taste white ground pepper
Chopped fresh chives


Method of Preparation:
1. In a large pot, sauté the onions and leeks with the butter.
2. Add chicken stock
3. Add diced potatoes and cook until they are soft.
4. Add the cream and mix well.
5. Season to taste with salt and pepper
6. Garnish with fresh chives.

Could you clarify what "1/2 each leek, cleaned and diced" means? I'm a novice in the kitchen!

Wow, that's a crazy instruction! I'm sorry I just knew where to get the recipe and didn't read it. :blush: I do know that the cleaned part about the leek, is they are grown in sand and if they are not very, very well cleaned your soup can end up with a gritty texture.
Here is how I would go about the 1/2 each leek, etc.;
1) leeks are usually sold in a rubber banded group of 3 to 5 depending on size of the leeks.
2) I would use all of the leeks in the bunch as I don't think the soup would be very "leeky" if you only used one.
3) chop off the root end so I wasn't getting any of it in the soup.
4) cut the leek in half crosswise and discard the dark green half.
5) cut the leek in half lengthwise and soak in water and rinse and then repeat again.
6) cut the leeks again lengthwise and then crosswise about 1/4 inch to get a dice.
7) then I would give them another bath, better safe than sorry.

Good grief, no wonder the chef only gave the "1/2 of each leek...."
Hope this helps and it really souldn't be that hard to do, just to write out.

Hi, I have a similar recipe using a powdered leek soup from Knorr. Follow package directions and add potatoes and chicken base (strong stock) just like the above recipe. Maybe not as good as the scratch recipe, but I can keep the ingredients on hand.
We are cheese fanatics and add shredded cheddar at the end.
