Look at the hours for DHS, some days it will stay open an hour or two later then others to the general public. Those are the days Fantasmic runs.

If you go to Disney's official site, you can get individual entertainment schedule for each park by clicking on the date you're interested in. Go to DHS for month you're visiting and then select each day you're there to find out when Fantasmic is showing.
